thixotropy
A structural property of certain substances. When undisturbed, the substance is like a gel. When shaken, the substance becomes liquid. When the recently disturbed substance is left alone, it becomes semisolid or solid again. Bottled ketchup is a good example of a thixotropic substance. Selected thixotropy links:
